Job Description:

We are working with an established USDA manufacturer in the Newark, NJ area seeking a Beef Cooking and Chilling Specialist to join their team. You will be responsible for overseeing the cooking and chilling processes involved in the preparation of beef products. Your role involves ensuring that beef products are cooked to the highest standards of quality, safety, and taste, while also effectively managing the chilling process to preserve freshness and extend shelf life. You will work closely with kitchen staff, quality control teams, and management to maintain efficient operations and uphold food safety regulations.Responsibilities:Cooking Operations:Execute cooking procedures for various beef products according to standardized recipes and specifications.Monitor cooking equipment to ensure proper temperature, timing, and cooking techniques are maintained.Adjust cooking processes as needed to achieve desired results and ensure consistency.Coordinate with kitchen staff to ensure timely preparation of beef products to meet production schedules.Chilling and Cooling Management:Oversee the chilling process to rapidly cool cooked beef products and maintain optimal temperature conditions.Monitor chilling equipment to ensure proper functionality and adherence to food safety regulations.Implement protocols for chilling procedures to minimize bacterial growth and preserve product quality.Conduct regular checks to verify the effectiveness of chilling procedures and maintain accurate temperature records.Quality Assurance:Conduct quality inspections of cooked beef products to ensure adherence to quality standards and specifications.Identify and address any deviations from quality parameters, taking corrective actions as necessary.Collaborate with quality control teams to implement quality improvement initiatives and address any quality-related issues.Maintain a clean and sanitary work environment in accordance with food safety guidelines.Documentation and Reporting:Document cooking and chilling processes, including temperature logs, production records, and quality assurance reports.Generate reports summarizing key performance indicators, such as yield, efficiency, and quality metrics.Communicate any issues or discrepancies to management and participate in problem-solving efforts.Training and Compliance:Provide training to kitchen staff on proper cooking and chilling procedures, as well as food safety practices.Ensure compliance with regulatory requirements and company policies related to food safety, sanitation, and hygiene.Stay updated on industry trends, best practices, and regulations related to beef cooking and chilling processes.Qualifications:Proven experience in food production, preferably in meat processing or culinary operations.Strong knowledge of beef cooking techniques, temperature control, and food safety principles.Familiarity with industrial cooking equipment, chilling systems, and temperature monitoring devices.Excellent attention to detail and ability to maintain high standards of quality and consistency.Effective communication and interpersonal skills to collaborate with cross-functional teams.Ability to work efficiently in a fast-paced environment and manage multiple tasks simultaneously.Understanding of regulatory requirements and industry standards for food safety and quality assurance.Certification in food safety (e.g., ServSafe) is desirable.Physical stamina and dexterity to perform tasks such as lifting, standing, and operating equipment.Flexibility to work flexible hours, including weekends and holidays, as needed.
